Far Yeast Brewing launches the new brand “Off Trail” The first release is the barrel-aged beer “Ginspiration”
Far Yeast Brewing Co., Ltd. (Head office: Shibuya-ku, Tokyo, President: Shiro Yamada) unveils a new brand today: “Off Trail.” The first product, “Ginspiration,” will be released on the market on Thursday, November 14th.
Barrel-Aged beer is beer has been aged for a period of time in a wooden barrel much like wine. In addition to the flavor and aroma contributions of the wood, wild yeasts further ferment the beer, resulting in an elegant product that surpasses a standard beer’s complexity. Base beer, yeast and bacteria, fruit and spices, and barrel selection all work together to create a unique combination of flavors through the aging process. Although originating in Europe, Barrel-Aged beers are now appreciated by craft beer consumers the world over, especially in the United States.
To craft “Ginspiration,” juniper berries*, commonly used for making gin, were steeped in the beer after barrel aging. Fusing the herbal aroma of juniper berries and the base beer’s citrus peel bitterness deepened the beer’s flavor and produced a gin-like aroma. The beer pairs well with sunomono and salmon, pungent cheese, or shrimp and pork dumplings. “Ginspiration” will be released to the market starting Thursday, November 14th in 750ml bottles and on draft at “Far Yeast Tokyo Craft Beer & Bao” in Shibuya, Tokyo as well as other taprooms around Japan. * What is Juniper Berry?
A juniper berry is the female seed cone produced by the various species of junipers. It has a herbal aroma, moderate bitterness and spicy flavor. Juniper berries are commonly used as a spice, particularly in European cuisine, and also gives gin its distinct flavor.

Limited brew Far Yeast Peach Session
We are proud to announce that our special limited brew, Far Yeast Peach Session, will be released on August 8th. This environmentally friendly fruit session ale fits the summer season perfectly!
We used 430kg of locally harvested Peaches, picked the day just before brewing. Although the fruit was deemed “too ugly” for commercial sale, they were still packed with fresh sweet peach flavour. Rather than throw such good fruit to the compost heap, we decided to use them to create a wonderful fruit session ale.
Our brewery team spent five hours painstakingly cleaning and puréeing the fruit to be added to the boil. Please enjoy the photos below to get an idea of the process!

These delightful peaches came to us from “Peach Senka Yamashita” (Head office: Yamanashi City, Yamanashi Prefecture, Representative Director: Ichiko Yamashita).
In addition to cultivating fruit, Peach Senka Yamashita runs a well-known cafe, “La Casa Della Pesca,” in Yamanashi City.
We also used their peaches to create other limited brewing products such as “Far Yeast Peach Brut” (released on March 2019).
Peach Senka Yamashita uses organic farming methods to bring out the fruit’s best natural taste spontaneously.
Through collaborations like this one, we will continue to challenge ourselves to create new and interesting products that will delight a wide variety of customers.
