Off Trail Launches 5th limited release project, “Saigon Fervor”: passion fruit barrel-aged sour beer.

Off Trail #5: Limited edition barrel-aged sour beer with passion fruit, “Saigon Fervor,” is now on sale. The “Off Trail” brand focuses on innovation and continuing to challenge conventional beer brewing methods. This blend takes “Saigon Passion,” a beer made in collaboration with “Heart of Darkness” brewery in Ho Chi Mihn, Vietnam, to a whole new level by using different yeast, primary fermentation in wood rather than stainless steel, and extended barrel aging time.

While brewing “Saigon Passion,” we syphoned off some of the wort to be fermented on Brettanomyces Claussenii in old Sake barrels. By allowing primary fermentation to occur in this environment, we hoped to start a co-fermentation with our inoculating yeast (Brett. C.) and other wild yeasts and bacteria living in the barrels’ wood. After primary fermentation had calmed down, we added additional passion fruit juice from Vietnam and aged the beer for 6 months to allow Brettanomyces to slowly ferment the remaining complex sugars in the beer.

This process and yeast combination culminated in a fruit-forward, refreshing passion fruit sour beer with complex aromatics and tannins derived from oak barrels and wild yeast. Compare “Saigon Passion” and “Saigon Fervor” side-by-side to truly appreciate the strong effects of these subtle differences in process.

While the new coronavirus continues spreading across the nation, frontline healthcare workers have been facing constant battles, treating patients day and night.

We would like to thank all the health care professionals who are engaged in medical care to protect the lives of new coronavirus patients in environments with severe infection risks. We at Far Yeast Brewing are committed to doing what we can to support them in this difficult task. 

Our company-owned bar “Far Yeast Tokyo Craft Beer & Bao” in Shibuya is currently closed due to the COVID-19 outbreak. The facility and kitchen staff have shifted daily operations to making nutritionally balanced, delicious lunch and delivering it directly to medical staff.

We started offering lunch boxes to Keio University Hospital on Tuesday, April 21st. The background history of this project is that one of Far Yeast Brewing’s executive staffs graduated from Keio University, and we, as Far Yeast brewing, used to participate in their alumni event “Keio Union Mitakai Convention” in the past. So we had a connection with Keio University, and this time, we proposed this donating bento box project to a pediatrician doctor at Keio University Hospital. The pediatric team kindly enough accepted this project, and we started providing lunchboxes to them.

At the same time, we launched a support project for healthcare workers. We titled it as “Clap for Carers,” and we are seeking supporters who can support the bento donation activities for healthcare workers.  We released product bundling called “Clap for Carers Support,” which is a set of craft beers and branded glassware, and we pledge using a part of sales for supporting this donation activity. We hope that this circle of support for healthcare professionals will spread and grow. And people will strengthen solidarity to overcome this crisis as soon as possible.

Craft gin made of craft beer! The first collaboration between Far Yeast Brewing and Kitaya. “KAGUA GIN” launches in mid-May.

Japan-Korea collaboration, Far Yeast Brewing teams up with Gorilla Brewing. Perfect for the spring season! A refreshing flavor of “Laurel leaves.” “GREATEST NEIGHBOUR” hits the market on March 27!

A new limited collaboration beer with Gorilla Brewing from Busan, Korea, “GREATEST NEIGHBOUR,” will be released on March 27th, 2020. 

Despite the difficult diplomatic relationship between Japan and South Korea, we decided to collaborate through beer with the common goal of growing the industry and exciting beer fans. 

“GREATEST NEIGHBOUR” was brewed with laurel leaves, the material that makes up the laurel wreath, a symbol of victory and glory for the Olympic games. This collaboration beer is meant to symbolize passing the baton from the PyeongChang 2018 Olympic Winter Games to the Tokyo Olympics. As the base recipe of this beer comes from our Tokyo White, a Wheat Saison, the bottle’s label features a unique white gorilla wearing a laurel wreath. Far Yeast Brewing Introduces Flagship Series in Cans!

Far Yeast Brewing Co., Ltd. (Head office: Shibuya-ku, Tokyo, President: Shiro Yamada), a craft beer brewery brimming with original beers distributed to the global market, canned their flagship series, Tokyo Blond, Tokyo White, and Tokyo IPA, in-house for the first time. The beers were released to the Japanese market at the beginning of April, 2020. 

In the Japanese craft beer industry, it is still common that smaller size breweries outsource beer brewing and canning to a larger contract brewery who already has canning equipment. However, we decided to install a can filling system of our own to package canned beer on site in Kosuge Village, Yamanashi Prefecture. The result: a full-scale entry into the canned beer market to expand our sales channels and bring our products to more beer fans. To start, we’re canning our flagship beers, Tokyo Blond, Tokyo White, and Tokyo IPA, but look out for new products in the near future.

The aluminum can package for craft beer is now very common in the United States and other countries that have advanced craft beer culture because the aluminum can package has multiple advantages for beer’s shelf stability and environmental impact. Shelf stability increases because of the can’s opacity compared to other packaged types – important flavor compounds contributed to the beer by hops are altered negatively by the presence of light, producing a “skunky” off flavor in the beer. Additionally, the cans’ reduced weight and more efficient space occupation increases transportation efficiency, decreasing the carbon footprint needed to move beer from brewery to customer as compared to glass. In Japan especially, the recycling rate of aluminum cans is over 90%※. So, aluminum cans are the most sustainable way to package beer.  

What makes this canned Far Yeast series special compared to the other canned beer is that the beer is can-conditioned, also known as “can re-fermentation.” After the primary fermentation, a little extra sugar and yeast are added before the liquid is sealed in the can. As a result, the trapped CO2 produced by fermentation creates a soft, silky carbonation in the beer, enriching the flavor. Also, the oxygen remaining in the aluminum can is metabolized during the re-fermentation process, reducing the risk of beer oxidation and maintaining long-term quality, and extending the beer’s shelf life to 12 months.

The simple and stylish package design expresses Tokyo with a sophisticated quality and a lively feeling that keeps evolving every day. The easiest way to differentiate the products is by the can’s color: golden for Tokyo Blond, refreshing light blue for Tokyo White, and hops green for Tokyo IPA.  The right-pointing arrows indicate the direction of Tokyo as seen from Europe, the center of beer culture. We will keep creating new value by sending beer full of originality from Japan to the world for customers to enjoy.
